Flatbread

Makes 4
Prep time: 10 minutes (+optional 20 min rest)
Cook time: 10 minutes

 200g plain flour
1 teaspoon baking powder
½ teaspoon salt
2 tablespoons yoghurt (Greek or plain)
2 tablespoons olive oil
60–80ml water (adjust as needed)

  1.  Mix flour, baking powder, and salt in a bowl.

  2. Add yoghurt, oil, and enough water to form a soft dough.

  3. Knead briefly until smooth.

  4. Rest 20 minutes

  5. Divide into 4 balls and roll out to ½ cm thick rounds

  6. Cook in a hot dry frying pan for 1–2 minutes per side until golden spots appear

  7. Serve warm or wrap to keep soft.
