Mashed Potatoes
Serves 4
Prep time: 10 minutes
Cook time: 20–25 minutes
1kg floury potatoes (Maris Piper or King Edward), peeled and chopped
100ml whole milk (warm)
50g butter
Salt and pepper
2 tablespoons double cream or sour cream
Garlic clove (peeled, added to the pot)
Place the potatoes (and garlic, if using) in a large pan of cold salted water.
Bring to a boil, then simmer for 15–20 minutes until fork-tender
Drain well and let steam dry for 2 minutes
Mash with a potato masher or use a ricer for extra smoothness
Add butter, warm milk, and cream (if using). Stir until silky and smooth.
Season with salt and pepper to taste.
Top with extra butter or herbs if desired.
